My Journey

Some of my earliest memories are of watching my mother in the kitchen, her quiet dedication, her effortless grace, and the way every dish she prepared carried love at its core. That simple act of care sparked something in me as a young boy. Over the years, my fascination with cooking grew into a passion, a joyful way to connect with others and create beauty through food.
In 2009, after being diagnosed with ulcerative proctitis, I learned that I could no longer eat gluten or dairy. At first, it felt like a door had closed, and I was faced with a challenge: how could I hold on to the craft I loved when two of its most familiar building blocks had suddenly been taken away?
But what I discovered was that another door, one filled with creativity, imagination, and nourishment, had opened. What began as a necessity quickly became a new kind of adventure. I found myself experimenting, learning, and slowly creating dishes that nourished not only my body but also my spirit.
This cookbook is the story of that journey: how I learned not only to take care of myself with food that was both wholesome and delicious, but also how to continue celebrating meals with my family, who now share in the joy of every dish.
I've kept these recipes simple, approachable, and imaginative, because I believe cooking should never feel like a burden. It's a celebration, of love, of togetherness, of the beauty we create when we gather around the table.
Let your senses guide you: the colours, the aromas, the textures. Present your food with care, and you've already done half the work.
Above all, have fun. Play with flavours. Try something new. Share your creations with the people you love, and let these recipes be a reminder that food is not just sustenance, it's joy, comfort, and connection. Simplified.
